How to Make Chicken Curry (Easy and Delicious)

This yellow chicken curry is packed full of flavour and so quick and easy to make that it's perfect for a weeknight meal.

For the base of the curry, I use a Thai Yellow Curry Paste (which I buy from my local Asian Supermarket) and then combine it with coconut to make a rich, smooth curry sauce. If you can't find Thai Yellow Curry Paste in the supermarkets then it is available to buy online at Amazon.

Follow these easy steps to recreate my delicious chicken curry with vegetables - in 30 minutes or less!

This is the star of the show; a medium yellow curry paste, available from most Asian supermarkets or online from Amazon.

Ingredients - Serves 4

You will need:-

  • 3 Tbsp Yellow Curry Paste
  • 1 Tbsp Olive Oil
  • Package of Chicken Breast Fillets
  • Can Coconut Milk
  • 1/2 Onion
  • 1 Large Potato

Other Vegetables to add last minute, for example:

  • 1 Red Bell Pepper
  • 1 Cup Sugar Snap Peas
  • Can of Stir Fry Vegetables: Baby Corn, Water Chestnuts, Beansprouts

Simmer for 5 minutes and serve

Easy Steps to Make Chicken Curry


  • On a chopping board, cut the Chicken Fillets into bite-sized pieces.





  • Preheat a large pan on medium-high, and then gently heat the curry paste and oil, whisking together for 1 minute.






  • Slowly add the can of coconut milk, whisking frequently until smooth.






  • Add the pieces of chicken and simmer very gently for about 12 minutes until the chicken is tender and no pink remains.





  • While the chicken is simmering, it's time to prepare the vegetables.


  • Begin by prepping the potato and onion. These take a little more time to cook than the other veggies and so we will cook these in the microwave. Slice the potatoes to about 1/8" thick, and then quarter the slices. Use a mandoline slicer if possible for the onion, because you want the onion slices to be very thin.


  • Add the potato and onion to a microwavable dish, add 1 tbsp water, cover and microwave on full power for 7-8 minutes until the potatoes and onion are fork-tender. Set aside.





  • Now prepare the other vegetables: slice the red pepper into strips, and wash and trim the snap peas. If you are adding a can of vegetables as well then simply open the can and strain the vegetables to remove the liquid.





  • When the chicken is tender and no pink remains, add all of the vegetables to the pan, including the cooked potatoes and onion. Cover and simmer for about 5 minutes to cook through and allow the flavors to all come together, but be careful not to overcook the vegetables.





Serve over a bed of fluffy jasmine rice (which you can cook in another pan at the same time). Enjoy!

Hi prairieprincess, great question! This is a medium curry that can easily be adjusted to taste by including more or less of the curry paste. I would say that it's more "flavourful" than "spicy". I hope you and your husband enjoy it! Appreciate all the votes & feedback :)

Great recipe Clover. I never thought of cooking the onions in the microwave first, I usually fry them with the curry paste then add the cocanut cream. Is the milk better to use?

I had planned curry for today and just toss in the left over roast chicken from yesterday. So I'll do the onions and potatoes in the microwave this time.
